ASU Opens Second Meat Market Location, Unveils New Product

The Meat Market @ The LeGrand will be open Fridays from noon-5:30 p.m. while ASU classes are in session. It features a wide variety of competitively priced, quality beef, pork, lamb and goat products as well as a growing number of smoked and fully cooked items from Angelo State’s USDA-inspected Food Safety and Product Development Lab (FSPDL).
The newest item available at the market is the award-winning ASU Firecracker. Developed as an easy alternative to popular “jalapeño poppers,” the Firecracker is a two-inch pork sausage link that contains bacon, cream cheese and chopped jalapeños. The ingredients are combined to produce a uniform flavor in every bite.
Created by graduate students in ASU’s Meat and Food Science Program, the Firecracker recently took second place in a national contest against other student food products entered by universities across the U.S. The products were judged on creativity, craftsmanship, palatability, food safety and product presentation.
“Our undergraduate and graduate students continue to demonstrate their place among students across the country as competitive and knowledgeable young pre-professionals,” said Dr. Kirk Braden, FSPDL director. “At the competition, several industry professionals from major food corporations asked “why didn’t we think of that?” and this is indicative of the things our students can achieve.”
The public can also still shop at the Meat Market’s original location in the ASU Management, Instruction and Research Center, 7945 Grape Creek Road.
